Once prized for their maternal instincts and foraging ability, Large Black hogs fell out of favor in America with the advent of indoor, intensive pork production. Originally from southwestern England, the breed is known for its delicious bacon and sausage. Distinctive for their overall size and lop ears, Large Blacks consume a great deal more forage than any of their commercial counterparts. They are indeed, the perfect pig for pastured production (say that three times fast)! Amazingly, the Large Black breed is listed as “Critical” by The Livestock Breed Conservancy.
Our hogs are raised outside, in paddocks that include both grass and woodland. This allows them to dig for tubers and roots, but also graze the pastures. They are necessarily supplemented with non-GMO grain sourced from a local farmer less than 45 minutes from our farm. This process produces a great tasting product that is naturally lean, low in saturated fats, and high in beneficial omega-3 fatty acids, vitamins, minerals, and CLA (Conjugated Linoleic Acid). All of these attributes directly affect our health, and reduce the risk of cancer, heart disease, diabetes and obesity!
We offer our pork “custom cut”, meaning we sell our customers a live animal and deliver it to the processor. The animal is processed into whatever cuts the customer wants, and they pick up their meat (and pay the processor) directly. This gives our customers the flexibility to determine what types of pork cuts they want, from as many chops or bacon as possible to all ground meat. Buying meat this way also benefits your pocketbook, as the meat is offered at a lower price due to the lack of additional charges for freezer space, storage, etc. Can’t store a whole animal yourself? No problem, we can combine your order with someone else’s and split an animal in halves.
Based on availability, we will offer retail cuts of meat either through the Chillicothe Farmer’s Market, or direct off the farm. However, product may be limited, so a small investment in a chest freezer might actually pay for itself in savings over the course of a couple years!
